Butter Recipes
Herb Butter
1 pound butter
3 to 4 tablespoons extra virgin olive oil
2 tablespoons fresh chives, chopped
1 tablespoon thyme, chopped
1 tablespoon sage, chopped
1 tablespoon rosemary, chopped
Cut butter into small cubes with a knife.
Add oil, chives, thyme, sage and rosemary to a food processor and blend until the herbs and chives change the color of the oil.
Place cubed butter in a separate bowl. Using a whisk attachment or hand blender at medium speed whip butter until soft. Add the herb oil to the butter and whip until fully incorporated.
Use plastic wrap to roll butter into a log. Let chill for 2 hours.
Lemon Butter
1 cup soft unsalted butter
3 teaspoons freshly squeezed lemon juice
1/4 cup minced fresh parsley
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Combine all ingredients in a bowl. Using a whisk attachment or hand blender at medium speed whip butter until all ingredients are incorporated.
Use plastic wrap to roll butter into a log. Let chill for 2 hours.

Vanilla-Cinnamon Butter
1 cup soft unsalted butter
2 vanilla beans
2 teaspoons ground cinnamon
Place butter in bowl. Cut vanilla beans lengthwise and scrape out seeds. Add seeds along with cinnamon to butter.
Using a whisk attachment or hand blender at medium speed whip butter until all ingredients are incorporated.
Use plastic wrap to roll butter into a log. Let chill for 2 hours.
Garlic-Herb Butter
1 cup soft unsalted butter
1 1/2 teaspoons lemon juice
1/2 teaspoon salt
2 clove garlic minced
3 tablespoons fresh parsley chopped
1 1/2 tablespoons fresh chopped herbs basil, oregano, rosemary etc
1/4 teaspoon black pepper
Combine all ingredients in a bowl. Using a whisk attachment or hand blender at medium speed whip butter until all ingredients are incorporated.
Use plastic wrap to roll butter into a log. Let chill for 2 hours.
Walnut-Blue Cheese Butter
1 cup soft unsalted butter
1/2 tsp salt
1/2 tsp ground black pepper
2/3 cup crumbled blue cheese
1/2 cup walnuts or pecans, chopped
2 tsp onion powder
2 tbsp freshly chopped parsley
Combine all ingredients in a bowl. Using a whisk attachment or hand blender at medium speed whip butter until all ingredients are incorporated.
Use plastic wrap to roll butter into a log. Let chill for 2 hours.
Jalapeno-Lime Butter
1 cup soft unsalted butter
1 tsp salt (I like pink Himalayan salt)
1/2 tsp ground black pepper
2 jalapeno peppers, finely chopped (14 g/ 0.5 oz)
2 tbsp fresh lime juice
2 tbsp freshly chopped cilantro
Combine all ingredients in a bowl. Using a whisk attachment or hand blender at medium speed whip butter until all ingredients are incorporated.
Use plastic wrap to roll butter into a log. Let chill for 2 hours.
